I used boneless, skinless chicken thighs because they stay flavorful and juicy, but they are still easy to cut and eat with the vegetables and bread. No picking up a chicken leg in the middle of a wonderfully juicy, slightly messy plate.

You get croutons with crisp, toasted edges and soft, savory centers that have soaked up all those wonderful pan juices.

This sheet pan chicken is cozy, a little indulgent, full of roasted vegetables, and very easy to eat with just a fork. That is why I chose boneless, skinless chicken thighs instead of bone-in chicken.

This cozy sheet pan chicken combines juicy boneles This cozy sheet pan chicken combines juicy boneless chicken thighs, bacon, broccoli, cauliflower, red onion, and big pieces of garlicky sourdough.

As everything roasts, the bread absorbs some of the savory chicken and bacon flavor while becoming golden and crisp around the edges. Add a squeeze of lemon at the end, and you have a wonderfully cozy fall dinner all on one pan.

I also included some easy ways to make it more MIND-diet friendly, including reducing the bacon, using whole-grain sourdough, replacing the butter with olive oil, and adding fresh spinach or kale.

They are rustic, crisp, and savory enough to pair with olives, pickles, roasted veggies, hummus, soup, or a creamy dairy-free dip.

A little rosemary or Italian seasoning, olive oil, salt, pepper, and even a sprinkle of flaxseed meal can add plenty of flavor while keeping them flexible for all the fun pairings.

I used goat cheddar and Pecorino Romano with regular unsalted butter, but vegan butter should work similarly if that is what you use.
