Street tacos have always had a special place in my heart. There’s something about the simplicity — warm tortillas, a handful of fillings, a squeeze of lime — that feels both comforting and filling. They’re quick, messy, flavorful, and always a little different depending on who’s making them.
As I’ve leaned more into my own journey of healthier eating, I’ve found myself asking: What if I could make street tacos that feel just as fun and indulgent, but with ingredients that support how I want my body to feel?
That’s how this little kitchen experiment came to life.

Instead of the usual meat filling, I started with roasted peppers and onions — because roasting brings out that deep, caramelized sweetness that makes vegetables taste like comfort food. I added in black beans for protein and fiber, a creamy vegan cheese sauce (still experimenting with recipes there — so stay tuned!), buttery slices of avocado, and, of course, my homemade salsa. My salsa recipe has a fresh zing that helps tie it all together for me.


I served them in gluten-free tortillas (another area I’m testing new recipes for), topped them off, and sat down with a plate of tacos that were just as satisfying as any I’ve had at a taco truck — but lighter, fresher, and more aligned with how I want to eat.
What I love most about these tacos isn’t just the flavor. It’s the reminder that healthy eating doesn’t have to mean giving up joy or tradition. It’s about tweaking, experimenting, and making meals that carry both taste and nourishment. For me, that’s the fun part — discovering that food can still feel like a celebration even when it’s made with more care for my health.

My Fresh Homemade Salsa

Bright, zesty, and full of fresh flavor — this salsa comes together in minutes with just a food processor and a handful of ingredients. Perfect on street tacos, as a dip with chips, or paired with avocados and beans for a quick snack.
Ingredients
- ½ red onion, roughly chopped
- ½ sweet onion, roughly chopped
- 1 cup fresh cilantro, rinsed and stems mostly removed
- 1 can (14–15 oz) chopped tomatoes
- 1–2 garlic cloves
- 1–2 Tbsp olive oil
- Juice of 1 lime
- Pinch of salt, to taste
Optional (for spice)
- Jalapeño, serrano, or your favorite chili pepper
Directions
- Place red onion, sweet onion, cilantro, tomatoes, garlic, olive oil, lime juice, and salt into a food processor.
- Blend until smooth or leave slightly chunky, depending on your texture preference.
- Taste and adjust seasoning — add more lime juice or salt as desired.
- For heat, blend in a pepper of choice (or serve on the side so guests can control spice).
- Serve immediately, or chill for at least 30 minutes to let flavors meld.

How can I start eating healthier if I’m really busy?
Making big dishes that can be used in several ways is one way. Another way is to meal plan, grocery shop, and then do some prep on the weekend or your day (s) off.
Do I have to give up my favorite foods to eat healthy?
Not always. Sometimes it’s all about just reducing the stuff that isn’t as good for you and adding a few more healthy options.
Is eating healthy more expensive?
Sometimes if you go straight to organic meats and veggies it can be, but if you are used to eating out a lot, it might even be less! You would be surprised to know that often if you go with specials on meat, and make sure to grab plenty of veggies… the other stuff like boxed and packaged that aren’t as healthy can be what ups your grocery bill.
How do I make healthy meals my family will actually eat?
My secret is to leave our onions in a lot of items because my son doesn’t eat them. But he also is a non-veggie eater so I tend to blend them into sauces and such. The kids don’t even notice. You don’t have to go overboard, sometimes it’s just little adjustments that do the trick
How often should I cook at home to eat healthier?
Often, you can find healthy meals at restaurants, but if you make a point of creating healthy meals at home, then I advise those be the majority and restaurants be the minority. It really depends on what you are eating when out and what you are eating at home. Restaurants tend to add more fats and salts to their foods because it tastes better! But a well cooked meal with more seasonings (rather than just salt) and fresh veggies can tip the scales to delicious AND healthy.
